Chocolate Budino

Ingredients

  • 5 egg yolks

  • 2 cups heavy cream

  • 1/4 cup sugar

  • 1 teaspoon espresso powder

  • 1 teaspoon vanilla

  • 1 tablespoon molasses

  • 2 cups of chocolate (all chocolates will work)

  • Prep time: 5 minutes

  • Cook time: 10 minutes

  • Rest/Cool time: 2-4 hours

  • 8 servings

Road map for the adventure

  • In the sauce pot, whisk together the egg yolks, heavy cream, espresso powder, sugar and molasses.

  • Over a low/medium heat, continuously whisk the mixture until the sugar is dissolved and the mixture is thick enough to coat the back of a spoon. 3-5 minutes

  • Take the pot off the stove and add in all your chocolate and whisk until melted.

  • Once melted, pass through a metal sieve.

  • Pour mixture into ramekins or another serving dish and allow to cool for 2-4 hours.

  • When ready to serve (optional) add caramel and flaky salt to the top of the budino.
